If you're looking for what to cook with chicken thighs, we recommend Crazy Tony's Grilled Congo Thighs. Used with Chocolate Habaneros and Amber Rum, you'd be CRAZY if you don't try this recipe out.

Pepper Joe's
8 skinless chicken thighs
2 brown congo peppers chopped and seeded (aka Chocolate Habanero
2 oz soy sauce
2 oz amber rum (I prefer Brugal Anejo, it's not a bad idea to drink some while you're at it!)
1/2 tsp oregano
1/2 tsp rosemary
1/2 tsp French thyme (can substitute w/ parsley)
Put all ingredients in large plastic bag, marinate 2-5 hrs.
Preheat grill to med high, grill 25-30 min, turning once halfway through.
Serve with spinach or collards.
