The Guajillo pepper is one of the most popular chiles grown in Mexico. They have a great flavor and a mild heat that makes these peppers versatile in much of Mexican cooking.
The Guajillo pepper plant grows around 2-3 ft. tall and produces many pods that are 3-6" long and 1" wide. They have a pendant-looking shape, tapering off to a point, with a raisin-like, wrinkly texture and a brownish-red color as they ripen to maturity.
What's unique about the Guajillo pepper is that it's commonly referred to as the dried version of the Mirasol pepper. But don't get confused, as the Mirasol pepper has slight differences in appearance, flavor, and heat level. The Guajillo chili has sweet, fruity tones, and then it hits you with a sharp, savory mild heat. The dried Guajillo chiles have a unique process as they are dried first as whole pods, then crush to a powder to make a seasoning paste. This pepper can be used to create mole sauces, salsas, sauces, and more!
