Ingredients:
½ cup pepper mash (any heat level)
½ cup vinegar (white, apple cider, or rice vinegar)
2–3 cloves garlic, smashed
1–2 tsp salt or hot pepper salt for an extra kick
Optional: 1–2 tbsp honey or sugar to balance
Optional: squeeze of lime

- Add everything to a small pot.
- Bring to a simmer for 5 minutes.
- Let it cool slightly, then blend until smooth.
- Bottle it, refrigerate it, and let the flavors develop overnight.
