This is one of the best meals to cook any time of the year! You can use this as a side dish or to eat as the main meal as this recipe has enough nutrition and protein, and beans are one of the healthiest things you can eat. This is an extremely versatile dish as you can serve with anything, but this is absolutely perfect the way it is and we wouldn't change a thing about this! Pete's Fancy Beans and Rice is a flavorful one-pot meal, and this easy dinner will become a family favorite. Thank you Peter for sharing your delicious recipe so everybody can try this!

Ingredients

1 large red onion

1 bell pepper (color of choice)

2-5 Carolina Reapers (adjust to tolerance)

8 garlic cloves

1 tsp salt

2 tbsp cumin

2 tbsp paprika

4 tbsp tomato paste
-
6 bay leaves
-
8 slices of bacon
-
4 cups white rice
-
2 cups brown rice
-
2 cans of bean rinsed
Directions
Preheat large pot at medium heat.
Cut bacon and put in pan, allow fat to render.
Add garlic, onion and salt and cook until light purple.
Add peppers and allow to cook all together for an additional minute.
Add rice, seasonings, and tomato paste, and stir until rice is evenly coated.
Add water and beans, stir and bring to a boil.
Lower heat to a simmer and cover. Cook 18 mins
Add salt to taste.
