Onryō Peanut Butter Fudge

Craving a sweet treat with a little kick of Ghost peppers? The Onryō Peanut Butter Fudge will satisfy your spicy and sweet cravings! This recipe was submitted by Brian Mercer, and we absolutely love this delight. This only took 20 minutes to make, and we immediately munched on them once they were done.

Ingredients

1 cup sweet salted butter

1 cup Jiff (or premium brand) peanut butter

3 1/2 cup confectioners sugar

1 1/2 chocolate ghost pepper pods - you can keep or remove seeds. (You can change pepper to your favorite. I like the color contrast with the chocolate pods)

2 teaspoon pure vanilla extract

Scorpion infused Pink Himalayan salt. Medium grain - I infuse my own salts

Loaf pan

Parchment paper

Electric hand mixer
Directions
Sift powdered sugar into large bowel, set aside.
Line loaf pan with parchment paper, set aside.
Mince pepper pods.
Simmer minced peppers in 1/2 cup of butter over low heat. Do not boil. All you are doing if extracting the flavors and heat from peppers. Light simmer for 5 minutes.
Add peanut butter, pepper butter, the other 1/2 cup of butter, and vanilla to microwave safe bowel.
Microwave for approximately a minute and half, till all melted.
Use mitt and remove, mix well.
Return mixture to microwave and cook approximately 2 minutes.
Keep a close eye on it. It will come to a rapid boil and could boil over. Remove as mixture starts to boil. Make sure to have a mitt on.
Bowel will be hot.
Carefully pour hot mixture into powder sugar mixing well with a spatula. Get as much of the mixture out of bowel as you can.
Mix by hand till all the sugar is coated.
Beat mixture with electric mixture till smooth.
Pour mixture in lined loaf pan. Tap on counter to level out fudge.
Optional - Sprinkle Scorpion (or your favorite pepper infused salt) on top of the warm fudge. How much you use is up to you.
I pretty much cover the entire top. Most people love the salt. It adds great texture and flavor.
Recipe Note
You could also just use any plain medium grain salt just for the flavor and texture if you do not want the extra heat. Place in refrigerator until set, remove from pan, remove paper, slice and enjoy.
