Crazy Tony's Grilled Congo Thighs


  • 8 skinless chicken thighs
  • 2 brown congo peppers (chopped and seeded)
  • 2 oz soy sauce
  • 2 oz amber rum (I prefer Brugal Anejo, it's not a bad idea to add some directly to your stomach while you're at it!)
  • 1/2 tsp oregano
  • 1/2 tsp rosemary
  • 1/2 tsp French thyme (can substitute w/ parsley)


  1. Put all ingredients in large plastic bag, marinate 2-5 hrs.
  2. Preheat grill to med high, grill 25-30 min, turning once halfway through.
  3. Serve with spinach or collards.
